The Super Foods of Uttarayan Special: Jalebi

You will be surprised that these jalebis are so easy to prepare. This recipe is specially for Gujarati people as its a Uttarayan special, but other readers can also try as it is super delicious. In this Makar Sankranti, get home the traditional gujarati recipe.

Ingredients :

For the Dough :

a pinch of baking powder
3/4 cup self raising flour
ghee for deep frying
1/3 cup curds (dahi)

For the syrup :

1/2 tsp saffron (kesar) strands
2 tsp rose water
3/4 cup sugar

For garnishing :

1 tbsp blanched and sliced pistachios
1/2 tsp cardamom (elaichi) powder

rose petals (optional)

Cooking Method :

Strain the flour with the baking powder.
Add 1/2 teacup of water to the curd and mix well.
Stir the sugar in 1 teacup of water and boil for 5 minutes.
Warm the kesar in a small vessel, add a little milk and rub until the kesar dissolves.
Add the mixture to the syrup.
Add the rose water.
Keep the syrup warm.

How to proceed :

Cook the ghee in a non sticky frying pan.
Select a plastic bottle with a small hole in the lid and fill with the dough.
Press the dough out from of a jalebi.
Fry on both sides. Take out and wait for 1 minute.
Drop the fried jalebis into the hot syrup. Leave for 2 minutes and then remove.
Sprinkle with pistachios, rose petals and cardamom powder, Serve hot.
