Corn and Mushroom Tostada

  • Ingredients
  • 1 sheet of corn tortilla
  • 50 gm mixed button & Shiitake mushrooms
  • 5 gm of thyme
  • 5 ml of olive oil
  • 20 gm of corn
  • 10 gm of green chili
  • 10 gm of coriander
  • 10 gm of onion
  • 5 gm of garlic
  • 20 gm of avocado
  • 1 portion of cheese dip
  • Sour cream and salsa for garnishing
  • Method
  • Saute mushrooms and garlic in olive oil.
  • Add onion, thyme, green chili, coriander and mix together. Add salt to taste.
  • Roll and fry a tortilla sheet into a bowl like shape.
  • Put the above filling in this cup. Garnish with tomato salsa, avocado slices and sour cream.
  • Serve with a side of cheese dip.
